Yummy Potatoes

I made these potatoes this week as a side dish and they were SO delicious…and easy.  I thought that I would share it with all of you! 🙂

Ingredients

6 cups of potatoes (I used a mixture of red and yellow potatoes)

1/2 cup of crumbled bacon

2 cups of cheddar cheese

Chili Powder

Season Salt

Garlic Powder

Dried Parsley

Ground Black Pepper

Butter flavored PAM cooking spray

Directions

Preheat oven to 400 degrees.  Spray a 9 X 13 glass dish with cooking spray.  Wash, scrub, and cut the potatoes into 1-inch cubes (leave the skins on).  Place potatoes in dish and spread around evenly.  On top of the potatoes, sprinkle season salt, chili powder, garlic powder, dried parsley, and pepper.  Yes, you read that right.  I didn’t include measurements because I didn’t have any.  Just sprinkle the spices evenly over the potatoes!  🙂  You can use your own judgement and preferences as to how much of each spice you use.  Personally, I used the same amount of everything except the garlic powder and pepper (I used a little less).

Using a spoon, lightly mix the potatoes a bit so that the spices are somewhat distributed to the potatoes near the bottom of the baking dish.

Spray over the top of the potatoes with cooking spray.

Cover with foil and bake for 1 hour or until done (mine were done after only 40 minutes).

Remove from oven and uncover.  Sprinkle evenly with crumbled bacon and cheese.  Return to the oven and bake until the cheese is melted and nice and bubbly.

EAT IT.

And try not to eat the nearly the entire dish like someone I know. 🙂
