If you still haven’t decided what to barbecue for your Fourth of July celebrations tomorrow then here’s the perfect sandwich for you. Sandwiches like these always remind me of summer and I could eat them everyday. Here’s what you’ll need:
3 large chicken breast
Your favorite bbq sauce
1 lb cooked bacon
Pepperjack cheese (or any favorite cheese)
All I do is put my chicken breasts in a gallon ziplock bag with the bbq sauce and let it sit all day; 4-6 hours at least. Once it’s marinated, I either pound with a meat mallet, or just butterfly cut it. Whatever you prefer. The sandwiches taste better when the chicken isn’t so thick. Then you can either grill it on the bbq or cook it in a pan on the stove top, about 4 minutes on each side on med/high heat.
When the chicken is done, place on bun. Add the cheese, bacon, lettuce and ranch and try to eat slowly enough that you don’t make a Carl’s Jr. worthy mess. The best thing about these sandwiches is you can really make them anyway you want, this is just how I eat them. You can add avocado, spinach, tomato, anything to make it healthier. Sometimes we bread the chicken and fry it before we put it on there too, but that’s the less healthy version.
(Just a little bacon tip: We oven fry our bacon. We put it on the broiler pan so all the grease will drip off of it while it cooks, and then place it in the oven at 425 for 15 mintes or so. Every oven is different, so you’ll have to watch it carefully. If your oven is hotter, cook at 400. It’s the easiest way to cook it and to clean up all that grease)
