Jon and I really love this easy-to-make pesto sauce!
It’s full of flavor and, due to the high amount of protein from the walnuts, it really fills you up. We have put it on top of plain noodles as well as tortellini and it tastes delicious either way. I have also put it on top of lettuce and have discovered that it makes a great salad dressing!
Basil Walnut Pesto
3 cups fresh basil leaves
1 1/2 cups chopped walnuts
4 cloves of garlic, peeled
1/4 cup grated Parmesan cheese
1 cup olive oil
salt and pepper to taste
In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.
That’s it! Super easy and super scrumptious!
