Banana Pancakes

Riley has been really into Curious George lately.  So I’ve been exploiting that love and using it to try to teach him the alphabet.

We’ve been reading this book.  So cute.  Then we made banana pancakes together.  That was over a week ago and Riley hasn’t stopped asking for those pancakes yet.  So yummy!

Banana Pancakes

 1 whole Egg

1 cup Milk

2 Tablespoons Canola Oil

2 whole Bananas, Peeled And Mashed

½ teaspoons Vanilla Extract

½ cups Whole Wheat Flour

½ cups All-purpose Flour

1 Tablespoon Sugar

2 teaspoons Baking Powder

It’s just your basic pancake recipe (I have to half whole wheat and all-purpose to ease  my family into the wheat revolution) and then you add some mashed up bananas.  The good and ripe kind that you use for banana bread.

Grease your skillet, pour in 1/4 cup circles, flip when bubbly, and enjoy!

Don’t forget to play Jack Johnson while eating….I think it makes a difference 🙂
