Oven-Baked “Fried” Chicken

I wouldn’t call this recipe healthy because it has the 6-letter-word butter in it.  But you feel healthy eating it because it is baked in the oven and not fried in a puddle of grease.  My husband said it was the best chicken I had ever made.  Usually I have a REALLY hard time cooking chicken.  It is dry or tough or (insert unappealing adjective here).  This chicken was tender and tasty.

Ingredients:

3 large chicken breasts

1 stick (1/2 cup) butter

1 1/2 cup bread crumbs

1/2 cup grated parmesan cheese

salt to taste

pepper to taste

2 tsp garlic powder

1 tsp chicken seasoning (or 1 crushed chicken bullion cube)

Melt butter in bowl.  Mix all other dry ingredients in a bowl.  Cut up your chicken in strips or nugget sized pieces.  Dip your chicken in the butter then roll in the crumb mixture.  Grease a 9×13 pan and bake at 375 for an hour or until chicken is cooked all the way through.   Serve with scalloped potatoes, broccoli, and your favorite bread/roll and you won’t be needing the second dinner that night 😉
