These mini corn dog muffins are super easy to make…and they taste pretty darn good too! That is, if you like corn dogs, of course. To be honest, I’m more of a fan of the “corn” than the actual “dog”. And this cornbread tastes really good wrapped around a dog! 😉 I make these for lunch on occasion and the kids devour them. However, there are always leftovers and Lizzie loves it when I pack them in her lunch for her to eat at school!
Mine Corn Dog Recipe
1/4 cup melted butter
1/4 cup unsweetened applesauce
1/2 cup sugar
2 eggs 1 cup milk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 teaspoon salt
8 – 10 all-beef hot dogs, cut into 1″ bites
**I always half this recipe. For me, the entire recipe makes way too much to fill one mini muffin tin. When I half it, I can fill nearly the whole entire tin (as long as I’m pretty conservative when adding batter to the cups).
1. Preheat oven to 375 degrees. Combine butter, applesauce, and sugar in a bowl. Mix in the eggs, followed by the milk.
2. In a separate bowl, combine baking soda, cornmeal, flour, and salt. Combine the wet ingredients with the dry ingredients.
3. Spray a mini muffin tin with non-stick spray, and spoon 1 Tablespoon of batter into each mini muffin cup. Place one hot dog bite into the middle of each cup.
4. Bake for 8-12 minutes, or until cornbread is golden brown.
