Mini Bacon Hashbrown Quiche

I don’t know about you but I buy a lot of eggs around Easter time.  They are a great deal, and I always think I’m going to boil and dye more than I do.  We had a brunch/Easter egg hunt to go to on Saturday and it was the perfect time to use up some of my eggs.

You need:

Tater rounds (flat tater tots)

6 eggs

milk

Hormel bacon pieces

I just got my mini muffin tin and greased it liberally.  Egg will STICK!  Then I stuck a tater round on the bottom.  I cooked them in the muffin tin at 425 for 20 minutes.  Then I took them out, put a few pieces of bacon crumbles in each one, and then poured my egg/milk scramble to the top of the space.  Then I put it back in the oven at 400 for about 10 minutes.  Just keep checking for when your eggs stopp jiggling when you shake the tin.  That’s it!  They flew off the tray in minutes 🙂
