Tex Mex Pasta

There are a few things my kids eat really well and two of them are tacos and pasta. So, I figured, why not combine the two? I have to say, the kids weren’t the only ones who devoured it 🙂

Tex Mex Pasta

8 oz noodles (I used the seashell kind)
1 pound ground beef
1/2 cup chopped onion
14 oz diced tomatoes
1 cup of corn (or one can if you don’t have fresh)
1.5 cups beef broth
1 cup shredded cheese of your choice
1/2 – 1 tsp cumin, chili powder, garlic powder, and black pepper…to taste

Saute the onions and beef together until the meat is cooked, adding the spices the last minute or two. Then add the noodles, tomatoes, and beef broth. Cover and simmer until liquid is gone and noodles are cooked all the way through. Stir in the corn then cover with cheese and let it melt before serving.
